For dish #14, we decided to go with a Mexican dish that cut way back on the salt, calories, and fat of a restaurant dish. Although this took a bit of time, it was well worth it. For a faster dinner, you could purchase ready-made guacamole and salsa and use those instead of the homemade verisons in the recipe.
These are chicken and guacamole tostadas, which we served with Xochitl tortilla chips on the side. We also added a sprinkling of cheddar cheese on top, which added flavor but not a ton of calories. We will definitely make these again!
