When it comes to cooking, my husband is truly trying to be efficient with the Achievement and make multiple dishes at a time. This brings us to dishes #17 and #18, a simple, but satisfying meat-and-potatoes dinner.
This is probably Michael’s most successful reduction (that should be an Achievement for that boy – he is trying desperately to perfect the reduction-making process this year), on maple-balsamic-glazed pork medallions. It was funny, because our last recipe had a maple-vinegar glaze as well, and as we were preparing this one, we both kept thinking, “Did we make this already??” But once we pulled up the previous recipe, we realized we were in the clear!
The potatoes are mashed potatoes with roasted garlic butter, which were easy, but somehow so much more flavorful than traditional mashed potatoes. We would certainly make this again. Well, Michael would certainly make this again, but I would certainly eat it! (My advice to the ladies out there – marry a man who can cook. It is so worth it 🙂
